Last week I shared a guest recipe for Diana Henry’s orange and pomegranate cake, which I was pleased to see was a really big hit with lots of you over the weekend. As mentioned, I’ve really been enjoying cooking from Diana’s latest book A Change of Appetite, which is packed full of lighter, vegetable, fish and grain-based dishes, with influences from Cambodia, North Africa, Peru, India and the Middle East.

About Ren

Ren Behan is a British-born food writer of Polish descent. She is a mum to three young children (13, 10 and 5) and spends lots of time with them in the kitchen.     Beetroot. It is one of the most healthiest vegetables out there. It’s classed as a super vegetable for all its properties. And it is a well known aid to help you when dieting

    Sweet potato is amazing – mashed up with a bit of clarified butter, cut into fries and sprinkled with paprika before roasting or just cut into cubes and put into a casserole… my cupboard is always full of sweet potatoes!

    My favourite vegetable or grain to cook healthy suppers with has to be Courgette, as it is something that i can do so much with! (Like for instance a nice Ratatouille or with a rice dish etc.).

    I love giant couscous because you can put so many different things and flavours with it, and it’s great as an accompaniment to a meal or on it’s own as a salad.

    Favourite veg or grain? Gosh, that’s tough. I suppose my favourite veg is courgette – so versatile. As for grain, I love giant cous cous, but those little buggers get EVERYWHERE after I feed them to the kids. Tasty, though!

    I love mixing quinoa into salads with any vegetables. It bulks it out and keeps me fuller for longer, not to mention the added protein!

    I eat loads of vegetables and my favourite are Jersey potatoes! I love them boiled and served with butter and black pepper – from April to June, when they are in season I buy lots!
