Last week I shared a guest recipe for Diana Henry’s orange and pomegranate cake, which I was pleased to see was a really big hit with lots of you over the weekend. As mentioned, I’ve really been enjoying cooking from Diana’s latest book A Change of Appetite, which is packed full of lighter, vegetable, fish and grain-based dishes, with influences from Cambodia, North Africa, Peru, India and the Middle East.

  52. Sweet potato is amazing – mashed up with a bit of clarified butter, cut into fries and sprinkled with paprika before roasting or just cut into cubes and put into a casserole… my cupboard is always full of sweet potatoes!

  53. Mushrooms are a great favourite and very versatile from exotic dishes to simply mushrooms on toast.

  58. I love adding Celery to our meals. In spaghetti bolognese, chilli con carne, casserole, curries… you can do so much with it!

    My favourite vegetable or grain to cook healthy suppers with has to be Courgette, as it is something that i can do so much with! (Like for instance a nice Ratatouille or with a rice dish etc.).

  70. I love giant couscous because you can put so many different things and flavours with it, and it’s great as an accompaniment to a meal or on it’s own as a salad.

  71. Favourite veg or grain? Gosh, that’s tough. I suppose my favourite veg is courgette – so versatile. As for grain, I love giant cous cous, but those little buggers get EVERYWHERE after I feed them to the kids. Tasty, though!

  72. Quinoa – it’s one of the best because of its high protein content and it tastes really good too.

  73. I love mixing quinoa into salads with any vegetables. It bulks it out and keeps me fuller for longer, not to mention the added protein!
