Happy Easter from Fabulicious Food!

I just wanted to wish you all a very Happy Easter. We are having a quiet family Easter, involving Easter baking, egg hunts around the garden and gathering together to celebrate.  Easter and spring also introduce some of my very favourite ingredients, and of course, tons of left over chocolate. I’ve already made my first mistake of ordering a giant bag of Mini Eggs online…so to get the Easter egg rolling I’ve baked Nigella’s Everyday Brownies to use (some of them) up! 

Most Marvellous Chocolate Cake

I have a couple of posts in the pipeline, soon I am going to be writing about the very exciting ‘Most Marvellous’ supermarket cake challenge, where 9 of us baked our way through supermarket basics ingredients to see which supermarket would win on flavour, quality and cost. The results were judged live on air by writer and editor of Waitrose Kitchen, William Sitwell and Helen from Fuss Free Flavours and were very interesting! In the meantime, if you fancy having a go at the same cake, it can be dressed up to pretty much any occasion…including Easter! The recipe is here on Vanessa Kimbell’s site. Easter Menu Planning

If you are still thinking about menu planning for the Easter weekend, don’t forget some of the ideas I wrote about when I recently cooked with the Extra Special range from ASDA…Asparagus with Samphire, Poached Eggs and Parmesan, Spring Lamb with Crushed New Potatoes and Chive Butter and those delightful Strawberry Tartlets.

Polish Easter Basket

In the meantime, for me, Easter is all about kicking back and relaxing, reflecting and enjoying family time. We’ve also started to prepare our traditional Polish Easter basket, ÅšwiÄ™cone, ready for blessing – to be eaten for breakfast on Easter Sunday, which is what I look forward to the most. The children love preparing the basket, too with decorated eggs, salt, butter, bread, ham, a candle and more. The basket is rich in symbolism and memories; Easter wouldn’t be the same to me without it.

  1. Hope you had a lovely relaxing Easter. Your Easter basket is so wonderful, I can well imagine why it’s your favourite bit – lots of love and creativity contained there. I’m looking forward to your supermarket cake post. I caught up with the programme on listen again and I was really pleased to find the co-op came up trumps. I made Easter brownies too – no surprise there I guess 😉

  5. Well I thought a soft brownie could not be improved upon but you’ve changed my mind! Fab way to soup up a Nigella recipe for Easter!
