Last night, Domestic Goddess Nigella Lawson was back on our television screens with her new series Nigellissima, accompanying her latest book. I’ll be writing about it next week, but in the meantime, it was Spain, rather than Italy, that provided the inspiration for Nigella’s Spanish Chicken with Chorizo and Potatoes. Sadly, we didn’t holiday in Spain, we spent our summer holidays in rainy Wales, arriving at our holiday lodge to find an almost-empty fridge. I say almost-empty, because there was one miserable, lonely packet of Spanish Chorizo sitting in there. So, I popped out to the local shops to pick up some free range chicken and some new potatoes and less than an hour later we were eagerly tucking into this paprika-glistening tray-bake.
An added bonus was that there was some left-over, which we discovered made perfect beach picnic food for the following day. Even better with a good dollop of mayonnaise – it became a sport of paprika-spiced potato salad with chicken drumsticks for the kids to nibble on.
