Healthy Noodle Pots

  • 2 Chicken breasts
  • 1 tsp Olive oil
  • 2 Carrots, peeled and grated
  • 2 Garlic cloves, crushed
  • 50 gram Kale (3/4 cup)
  • 1 liter Chicken stock (4 generous cups)
  • 4 tbsp Light soy sauce
  • 200 gram Wholewheat noodles (7 oz)

  1. Preheat the grill (broiler) to medium and place the chicken under the grill for 14 minutes, or until cooked through, flipping halfway through cooking. Shred the chicken using 2 forks, then set aside.
  2. Heat the oil in a large pan and add the carrots, garlic and kale and cook gently for 2 minutes. Add the chicken stock, soy sauce, noodles and cooked chicken breast and simmer for 5 minutes.
  3. Divide the mixture into two serving bowls (or into cups or jars) and serve hot.
