Polish Carrot and Apple Salad (Surówka)

Serves: 6-8
  • 4 large carrots
  • 2 small apples
  • handful sultanas/raisins
  • heaped tablespoon fresh lemon juice
  • ½ teaspoon caster sugar
  • sprinkle sea salt
  • 1 teaspoon caraway seeds
  1. Peel and grate the carrots and apples, using a food processor or a manual grater. Add to a large bowl and throw in the sultanas/raisins.
  2. Squeeze over the fresh lemon juice and sprinkle over the sugar and salt. Mix well and serve.
You can add a couple of tablespoons of fresh cream as an alternative. I crumbled over some feta cheese and served this salad alongside a Polish Potato Salad to make a main dish.
